Homemade Peach Galette

I find galettes are the easiest, lightest dessert or breakfast fare. No sugar except sprinkled to make the crust crispy.

Peach Galette Recipe

One 12 inch tart

Flaky Butter Pastry

  • See recipe below
  • + 1 tbsp sugar
  • + 2 tbsp flour (thickening fruit juice and rolling out)

Filling 

  • 3 cups fruit, sliced
  • 2 tsp fresh lemon juice
  • a few tablespoons of sugar to taste

Pre-heat oven to 400°F.

Put rolled dough on on baking sheet and refrigerate.

Combine 1 tbsp sugar with around 2 tbsp of flour (depending on fruit).

Toss fruit with lemon juice and sugar.

Remove dough from refrigerator and cover with flour and sugar mix, except for border (around 2 inches), then cover the same area with the fruit mixture.

Fold the edges of the dough over the fruit, pleating edges and shave some butter over the exposed fruit.

Bake approximately 40 minutes, until crust is golden brown and the fruit is tender. Let cool, sprinkle with confectioner’s sugar and serve.

Flaky Butter Pastry

  • 1 c flour
  • 1 tsp sugar
  • 1/2 tsp salt
  • 1/4 tsp baking powder
  • 4 tbsp butter, cut into chunks
  • 3 tbsp sour cream

Combine dry ingredients, add butter to the flour mixture until it forms a coarse meal.

Add sour cream, blend. Then knead and squeeze dough 8 times.

Form into a rough ball and chill at least half an hour, then bring to room temperature for 15 minutes before rolling.

Flour the work surface and roll out the dough to a 1/4 inch thickness.
