Basil & Black Pepper Summer Fruit Salad
Serves 4 to 6
3 medium peaches / ~3 cups (pitted and sliced into 1/2 inch pieces)
2 half pint blackberries (~2 cups)
1 pint strawberries (washed, hulled, quartered)
1-2 tbsp juice from 1 lime
2 tbsp minced fresh basil leaves
1/2 tsp freshly ground black pepper
4 tsp sugar
Mix sugar, basil and black pepper in large bowl. Using rubber spatula, press sugar mixture onto the side of the bowl until the sugar becomes damp (about 30 seconds).
Add fruit to bowl with sugar. Gently toss fruit with sugar mixture until combined. Let stand at room temperature, stirring occasionally, until the fruit releases its juices (15 – 30 minutes).
Add lime juice to balance sweetness, taste and serve.
