Fennel & Zucchini Spring Salad

Toss together some of spring’s best fresh ingredients with a quick dressing for a refreshing spring lunch or side salad. 

3 sm zucchini (sliced thin)

1 med fennel bulb (sliced thin)

1 cup peas

4 cups fresh watercress

1/2+ c fresh mint (torn up)

 

Dressing

3 tbsp extra-virgin olive oil

3 tbsp fresh lemon juice

1 tbsp lemon zest

1/4 tsp sea salt

1/4 tsp ground pepper

 

Optional Garnishes

1/2 cup crumbled feta (or similar)

Additional mint leaves
