Simple Chickpea Salad

A simple and savory salad addition to your spring and summer lunch menu.  This recipe delivers pantry staples in a fresh new way.

Simple Chickpea Salad 

1 can of chickpeas (drained)

1 small jar of pimento stuffed olives (sliced – olives, not the jar!)

1 tbsp of chopped Italian parsley


Mix together olive oil, lemon juice, 1 tsp mustard & salt and pepper to taste

Toss salad with 1 tbsp of dressing, let salad sit for around 30 minutes to meld flavors
